What do you do if you have three large tubs of protein powder you ordered on impulse because it was Black Friday and you thought you'd need loads of it to "fuel yourself"? And worse, what if the taste isn't even what you'd expected, not as delicious and milkshakey like all the reviews claim? Do you get that weird nauseating feeling when you down your protein with just milk or water? *Raises hand*
These pancakes are the best alternative, in my opinion. I have tried making protein waffles, protein shakes, proats, and protein cookies; but I find pancakes to be the most delicious and satisfying option of them all. They're soft, fluffy, naturally sweetened and flavored with the banana, and surprisingly filling!
The best part is that they're so easy to make, and that's coming from someone who can barely cook!
All you need is three ingredients: a scoop of protein powder, a banana (large), and an egg. For macro trackers, that amounts to about 25C, 7F, and 31P = 277 calories total.
Simple and healthy, isn't it? So let's jump right into it:
Step ONE. Take three-quarters of your banana (the rest will be used later for topping) and mash it in a bowl with a fork. The riper, the easier.
Step TWO. Add an egg and whisk it together with the same fork (or a regular whisk, I guess it doesn't matter, but a fork works fine and it saves you on extra dishwashing).
Step THREE. Preheat your pan on low (like really low). Add a scoop of your favorite protein powder (here the flavor is chocolate peanut butter cup) and mix until incorporated. I personally take Select Protein by PEScience, and of the 3 flavors I tried my favorite was Snickerdoodle.
Step FOUR. Pour some batter onto your pan. I know everyone makes different sized pancakes; for me, this batter makes me two. And if you have a non-stick frying pan, I find that greasing is completely unnecessary.
It's very important that your heat here is low. Banana batter should not be treated like regular flour. If the heat is high then the pancake burns regardless of which batter you're using, but for banana think of it as 10 times worse. Give it lots of time (by lots I mean about 2 minutes), and wait for the little bubbles to start showing. You don't need to wait for bubbles allllll over like you would for normal pancakes. Just try it a few times and you'll get the gist of when you think you should flip.
Sometimes if you wait a little too long, the pancake turns super brown, more so here because the protein is chocolate flavored. The dark color doesn't necessarily mean burnt pancake - I'm guessing it's because of the banana but I'm not entirely sure.
Anyway, flip once, wait for the other side to bake, and you're done! Garnish with slices of leftover banana, and drizzle with yogurt or honey or whatever syrup you use. This makes a super easy breakfast in less than 10 minutes!
